Have you ever heard that it is important to “eat a rainbow” of foods?  It’s no secret that eating colorful fruits and vegetables can help prevent against diseases and cancers.  Not to mention strengthen your immune system, promote a healthy heart and create radiant skin.

Below, Stefanie has put together a suggestion of foods classified by color along with health properties and benefits.

Green fruits and vegetables such asavocados, asparagus, broccoli, brussels sprouts, green apples, kiwi, lettuce, peas, and celery.  These foods are all colored by the plant pigment chlorophyll and an excellent source of lutein and indoles.  Lutein is known as the “eye vitamin” and is used to prevent eye diseases, breast cancer, colon cancer, heart disease and type 2 diabetes.  Indoles have been found to inhibit the development of cancer in the bladder, breast, colon, liver, lung, and stomach.

Orange/yellow fruits and vegetables such as: carrots, yellow beets, mangos, peaches, yellow peppers, papaya, pumpkin, and sweet potatoes. These fruits and vegetables contain carotenoids.  Carotenoids act as antioxidants within the body which protect cells from free radicals, substances that work to destroy cell membranes and DNA. Carotenoids are known for their strong cancer-fighting properties.

Red fruits and vegetables such as: red apples, cherries, cranberries, pink grapefruit, red grapes, radishes, red peppers, pomegranates, raspberries, rhubarb, strawberries, tomatoes, and watermelon. Red fruits and vegetables contain lycopene which has been studied for its cancer-fighting effects and other health benefits.

Blue/purple fruits and vegetables such as: blueberries, blackberries, eggplant, black olives, prunes, plums, purple grapes and raisins.  It’s a scientifically-proven fact that the darker the food the higher the level of antioxidants.  These foods contain anthocyanins which are known to protect cells from damage and to reduce the risk of heart disease.

White/Brown fruits and vegetables such as: cauliflower, garlic, potatoes, white onions, mushrooms, bananas and white peaches. These fruits and vegetables contain anthoxanthins which help prevent cancer, keeps bones strong, balances hormones, reduces inflammation and helps lower cholesterol.

Remember to “eat a rainbow” next time your preparing your next meal by mixing in fruits and vegetables with varieties of colors.  Enjoy your colorful rainbow of eating!
